Biological Principles of Nutrition

This course introduces students to the biological principles of nutrition and related topics, as demonstrated in the scientific literature and evidence-based practices.

Course topics include an introduction to human nutrition and food science; digestion, absorption, and metabolism; macronutrients & micronutrients; nutrition in healthy and disease statuses; and energy balance, weight control, and obesity.
